10 eggs4 egg whites1 cup cottage cheese8 ounces cheddar cheese2 cups chopped onions2 cups chopped peppers (red, green, yellow)3 Tbsp Parmesan cheese10 tbsp bacon bits1 pkg frozen spinachYou can replace the bacon bits with canned crab; or shrimp or make this a vegetarian dishI like using Portabella Mushrooms for a meaty veggie taste.
Spray pie plates with Pam and cook in 350 degree oven until golden on top I cook mine a little longer personal choice. Cut into 12 pieces and freeze in zip lock bags.
