Broccoli, Cheese & Rice Bake

One 6 oz. package Farmhouse® Broccoli au Gratin Rice 2 cups frozen chopped broccoli, thawed 2 cups grated cheddar cheese 1-1/4 cups milk 1 cup diced ham 1 cup sliced scallions 4 eggs 1/8 teaspoon nutmeg Salt and pepper to taste
1.Preheat oven to 350° F.
2.Prepare rice according to package directions; set aside.
3.In a large bowl, combine broccoli, cheese, milk, ham, scallions, eggs, nutmeg, salt and pepper to taste.
4.Stir in prepared rice. Turn rice mixture into a 2-quart oval casserole.
5.Bake at 350° F for 45-50 minutes or until knife inserted in center comes out clean.
6.Let stand 10 minutes before serving.
Serving Size: Makes about four 2 cup servings
