Sweet and Sour Chicken

1 raw onion, large, diced4 chicken breasts (or two large breasts halved) chopped4 Tbsp Olive Oil3 Tbsp Granulated sugar3 Tbsp Ketchup2 Tbsp Soy Sauce2 Tbsp Lemon Juice3 snack cups Dole Mandarin oranges, drainedRice
- Pour oil into skillet
- Chop onion, then add to skillet
- Cut chicken, then add to skillet
- Stir together the sugar, ketchup, soy sauce, and lemon sauce
- Pour into skillet over mostly cooked chicken and onion
- Let simmer for 30- 35 minutes
When you start your oil also start your rice. Follow the directions on the rice package to get the best results. I used Aborrio rice with this recipe.
Serve rice and chicken mixture separately. Enjoy.
