Cranberry Sauce

Ingredients

1 cup red wine1 cup granulated sugar1 12-oz bag fresh whole cranberries1 3"-6" length orange peel1 3" stick cinnamon9 whole cloves1 star anise (optional)Lemon juice to taste
Wash cranberries, discarding any stems, leaves or rotted ones.
Combine wine & sugar in medium saucepan over medium heat to dissolve sugar. Add cranberries, orange peel, and spices, and simmer on medium high for 10 minutes. When cranberries start to burst (you will hear popping) you can crush them against the sides of the pot to make a thicker, less chunky sauce.
When sauce reaches desired consistency and cranberries have burst, taste, and add lemon juice.
Remove from heat and chill. Remove orange peel & whole spices before serving.
