Zucchini, .5 cup, slicedSummer Squash, .5 cup, sliced Red Ripe Tomatoes, .5 cup cherry tomatoesOnions, raw, .25 cup, chopped Portabella Mushrooms, 80 gramsGreen Peppers (bell peppers), .25 cup, stripsExtra Light Olive Oil, .3333 tbsp Minced Garlic, 2 tsp Basil, 2 tbspSalt, 1 tspPepper, black, 1 tbsp
Turn stovetop on medium. Put all ingredients in a plastic ziplock bag and shake until covered evenly. Pour ingredients into pan and cover. Let veggies cook about 5 minutes then stir. Continue this pattern until all vegetables are tender (about 10-15 minutes). Place on bread with cheese or other toppings desired (I left these ingredients out so that you could calculate the calories of your own additions).
