Really Easy Brunswick Stew

Ingredients
1 1lb, 4 oz pkg refrigerated diced potatoes with onion4 cups fat-free, low sodium chicken broth1 (28 oz) can undrained diced tomatoes1 (15 oz.) can drained lima beans1 (18 oz) container refrigerated shredded pork or chicken barbecue (Lloyd's or another brand)
Directions
Open bag of diced potatoes, chopping larger pieces in half. Mocrowave them on high for about 5 minutes to make them more tender. Place the potatoes with onion in a Dutch oven and add the broth. Bring the mixture to boil on med-high heat. Reduce heat to medium; simmer 5 minutes. Stir in tomatoes, corn, beans and barbecue. Reduce heat to med-low and cook covered 20 minutes or until heated and vegetables are tender. It can cook an hour or two with good results.

Makes about 12 cups.
