Wild Rice & Squah Pilaf

Ingredients:*Brown Rice Long Grain Lundgren 1/4 cup dry (yields 2/3 cup), 2.33 cup (remove)Cabbage, fresh, .25 head, medium (about 5-3/4" dia) (remove)Green Peppers (bell peppers), 0.5 cup, chopped (remove)Mushrooms, fresh, 2 large (remove)Winter Squash, 2 cup, cubes (remove)Thyme, ground, 4 tbsp (remove)Chicken Broth (or veg stock for a vegetarian style), 1 cup (8 fl oz) (remove)Onions, raw, 1 cup, chopped (remove)
Cook the rice. this can take a whole hour, so plan ahead!
Chop and saute the vegetables. (Squash peels and chops easily after a few minutes in the microwave!!).
Add rice to sauted vegetables. Add 1 cup broth or stock, simmer until absorbed. Shouldn't take long, as rice and veg are already cooked.
