Ingredients
Directions
* 200 gr pumpkin* 2 tbsp stevia* 1/2 cup water
Cut pumpkin in 1-2" cubes. Put in a small pot. Mix water and 1 tbsp stevia elsewhere and pour over them. Close the lid and cook on stove (mid-heat) for 30 mins. When time is up, turn off the heat, open the lid and let it cool for 15 mins. Sprinkle 1 tbsp stevia over pumpkins and shake the pot to distribute stevia evenly. Let it sit for 10 mins and transfer pumpkins (not the water) into a plate and let it cool down in the fridge. Sprinkle some crushed walnuts right before serving (optional). If you are into whipped cream, you can put a bit on it too. It enhances the taste, but it's optional.
It makes 2 servings.
