Panna Cotta with Blueberries and Stevia

Lightly grease 4 ramekins with neutral flavored oil. Place cold water in medium bowl and sprinkle gelatin over it evenly. Let it sit 5 minutes. Divide blueberries evenly among ramekins.
Meanwhile, heat cream, half and half and buttermilk in saucepan until warm, but not hot. Remove from heat and add stevia and vanilla extract. Stir to combine.
Add cream mixture to gelatin and whisk to remove any lumps. Pour cream/gelatin mixture over each dish, distributing equally. Refrigerate at least 4 hours to set completely.
Serving Size: makes 4 half cup servings.
