Rudi Lechner's Zucchini Bread

Zucchini BreadServings: 12 3 whole eggs1-3/4 cups sugar3 cups flour1 cup vegetable oil1/2 teaspoon salt1 teaspoon vanilla1 teaspoon lemon juice2 teaspoons cinnamon1 teaspoon baking powder1 teaspoon baking soda1/2 cup raisins, seedless1/2 cup chopped walnuts1-1/2 cups zucchini, shreddedEGG WASH:1 whole egg1/3 cup milk1 teaspoon sugar
Preheat oven to 350 degrees.
Egg wash:
Blend 1 egg, milk and one teaspoon of sugar.
Combine sugar, eggs, and oil and mix in processor. In another bowl, mix flour and all dry ingredients. Add the dry ingredients to sugar, oil, and egg mixture slowly. Carefully fold in zucchini and mix well.
Fill two 9" cake pans, lightly greased and floured, and bake at 350 degrees for 55 minutes. Brush with egg wash and bake 2 more minutes.
Cut each loaf into 12 wedges and serve warm. Yield: 2 loaves
