Vegetarian Skillet Chili

Ingredients
2 14.5oz cans diced tomatoes1 15.5oz can black beans, drained and rinsed1 large onion, diced1 cup of frozen corn kernels(no need to thaw)1 medium green pepper, cut into 1 in pieces1 clove garlic, minced2 tbsp chili powder1 tsp ground cumin1 tbsp EVOO
Directions
1. in a large non stick skillet, heat 1 tbsp olive oil over medium heat. saute onions until soft and translucent(approx 5 minutes)
2. add spices and garlic and cook until fragrant (approx 1 Min).
3. add in tomatoes and cook for 15 minutes mashing the big pieces of tomato.
4. add in remaining ingredients except to skillet and cook another 10 minutes.
5. serve hot with salsa, light sour cream and shredded cheddar cheese.
