Mexican Chicken Salad

Ingredients
3 chicken breastsSalt and Pepper to taste1/2 cup lime juice2 tbsp olive oil4 cloves of garlic1 tsp each chili powder, ground cumin and salt19 oz can black beans, rinsed and drained2 large tomatoes1/2 cup chopped green onion4 cups romaine lettuce
Directions
Season the chicken with salt and pepper. Grill the chicken on both sides until it is no longer pink inside. Set aside at least 10 minutes and then cut into strips.

In a mini blender, combine lime juice, olive oil, garlic, chili powder, cumin and salt. Process until relatively smooth (I find it helps if you pre-chop the garlic prior to putting in the blender).

On a plate, layer the lettuce, tomato, black beans, chicken and onion. Evenly spoon over dressing and serve.
