1-2 zucchinionion, choppedbell pepper, choppedcelery, choppedgarlic, minced1/2 c. mayo1/3 c. romano cheese1 eggsaltpepperitalian seasoningred pepper
Add zucchini and other vegetables to a pot of water and bring to a boil. Turn down heat and simmer for 5 minutes. In a casserole dish mix together the garlic, mayo, romano cheese, egg, and seasonings. Add cooked vegetables to the wet mix. Sprinkle with panko and shredded cheese. Bake for 30 minutes at 350.
