Flax Muffin in a Minute

Ingredients
Directions
1/4 c flax meal1/4 tsp baking powder1/4 tsp cinnamondash salt2 tsp sugar equivalent2 Tbsp butter1 egg1/2 tsp vanilla1/2 c blueberries (optional)
Mix dry ingredients. (This can be mixed and stored in a ziplock snack bag. I mix several at a time and use as needed.)
In coffee mug or small bowl, melt butter in microwave.
Beat egg, add vanilla, add dry ingredients, then blueberries.
Pour into mug and stir into butter.
Microwave on high 1-2 minutes.
Pour out and put mug into soak immediately!
