Ingredients
1 tablespoon olive oil4 cloves garlic1 cup chopped onions1 cup chopped celery1 cup chopped carrots1/2 cup chopped cabbage1/4 cup fresh chopped parsley1 teaspoon turmeric1 tablespoon sage1 tablespoon rosemary 1 teaspoon thyme1 cup cut up cooked chicken1 cup chicken broth1 can diced tomatoes 4 cups water
Directions
Heat olive oil in large pot. add chopped garlic, onion, celery, parsley, and seasonings. Lightly saute until all vegetables start to turn tender. Add chicken broth and chicken and heat. Then add the 4 cups water. Cook on stove on low heat for about an hour. Then add the can of diced tomatoes.
Do not add salt. The fresh vegetables, canned tomatoes and broth have enough sodium already.
Serve in large soup bowls and enjoy very slowly. It really fills you up.
Serves 4 if you do large bowls, or 8 if you do small bowls. I have calculated it for 4 servings.
This can also be done over night in slow cooker.

Serving Size: makes 4 very large servings of soup
