I prefer grilled zuchinni and eggplant. Trader Joe's makes a fine frozen version that needs a minute to warm up in the micro.A ciabatta roll, toasted.Fresh spinach as much as you wantRoasted red peppers in the jar or made yourself.Soft goat cheese you can spread like cream cheese.
Directions
Toat the bun, warm up the eggplant and zuchinni spread on some cheese, put on the spinach and pepper and enjoy!
