Oven Fried Okra

Ingredients
1 1/2 Cups yellow cornmeal3/4 tsp. salt1/2 tsp ground black pepperDash of ground red pepper1/2 Cup fat-free buttermilk1 lightly beaten egg3 Cups okra - trimmed and cut in 3/4 inch slicesCooking Spray
Directions
Preheat oven to 450. Spray cookie sheet with cooking spray.

Combine cornmeal, 1/2 tsp salt, black pepper, red pepper and put in a shallow dish.

Mix together buttermilk and egg in a bowl; coat okra with egg/butterilk mixture for 3 minutes.

Place okra in cornmeal mixture and toss.

Spread coated okra on oil sprayed flat pan and lightly spray okra tops with cooking spray.

Bake at 450 for 40 minutes; stir after 20 minutes; sprinkle with remaining salt.
