Ham & Bean Soup

Ingredients
Beans, great northern, 1 lbHam, regular (11% fat), 1 cup, diced Onions, raw, 1 cup, chopped Pepper, black, 1 tsp Carrots, raw, 1 large, choppedCelery, raw, 1 stalk, large, choppedBay Leaf, 1 Tomato Sauce, 1 cup water, 8 cups
Directions
Put beans in water and bring to boil. Boil for 2 minutes then turn off heat, cover and let stand for 1 hour. After 1 hour, stir in rest of ingredients. Bring to a boil, reduce heat, cover and simmer until beans are tender, about 1 1/2 - 2 hours. Remove bay leaf and serve. Watch to pot to make sure the water level is above beans, add more water if needed.
