Cauliflower and Leek Soup

Ingredients
2 tablespoons extra virgin olive oil3 tablespoons butter3 leeks, cut into 1 inch pieces1 large head cauliflower, chopped3 garlic cloves, finely chopped8 cups vegetable stocksalt and fresh ground pepper to taste
Directions
Heat olive oil and butter in large pot over medium heat
Add leeks, cauliflower and garlic and saute for 10 minutes
Stir in vegetable stock and bring mixture to boil
Reduce heat, cover and simmer for 45 minutes
Remove soup from heat
Blend with mixer or immersion blender
Season with salt and pepper to taste
