3 Bean Soup

4 c. water4 chicken bullion cubes2 stalks celery, chopped1 carrot, chopped1/2 onion, chopped1 glove of garlic2 c. fresh spinach, chopped2 c. cabbage, chopped1 can each kidney beans, black beans, white beans1 can chopped tomatoes & green chiles1 tsp. salt & pepper2 tsp. cilantro
Use non-stick spray to coat the bottom of a soup pan.
Add onion, celery and garlic
Add 4 cups of water and bring to a boil
Add 4 bullion cubes and carrots, continue to boil
Add spinach and cabbage.
Add tomatoes and beans (straining and rinsing well)
Turn the heat down and let the soup simmer, blending flavors together for 30 minutes
