Sweet Potato Black Bean Quesadillas

Can easily leave out the cheese.
Roast sweet potaotes in skin until tender. Take out from skin and mash. Add 1 can of rinsed, canned black beans. Add cumin, cinnamin, a touch of cayenne to taste. Add shredded cheese and mix together. Spoon onto half the tortilla and fold in half. Bake until warm, or freeze and then bake until warm.
