Tomato Vegetable Soup

Ingredients
1/2 Red Onion, chopped2 cloves Garlic, chopped1 cup Zucchini, chopped1 bag Trader Joe's Organic Harvest Hodeposge4 cups Low Sodium Vegetable Broth1 small can Low Sodium Tomato Saucesalt & pepper to taste
Directions
Add onion and 5 cook until soft. Add garlic and zucchini and cook an additional 5 mintues. Add remaining ingredients, stir and simmer for 10 mintues or until ready to serve.

Feel free to add any dried or fresh herbs you like.

Makes 7 one-cup servings.
