meatless meatloaf with cashew ginger sauce

Sauce: 2 Cups toasted Cashews1 Cup Water2 Tablespoons Ginger1 Tablespoon Soy Sauce1 Tablespoon Brown Sugar2 Tablespoons Cider Vinegar-------Loaf:2 Medium Onions (minced)1 Tablespoon butter1 Cup Mushrooms (chopped)1 +1/2 teaspoon salt1 teaspoon Basil1 teaspoon Thyme1 teaspoon Dill4 Cloves Garlic (minced)6 Cups Carrots (grated)2 Cups Bread Crumbs1 Cup Cheddar (grated)2 Eggs
Sauce: Puree all sauce ingredients in blender. Heat gently before serving.
Loaf:
Oil 9X13 -ish pan and preheat oven 350F.
Sayte onions in butter for 5 min. Add mushrooms, salt, herbs, and garlic. Saute for 10 more min.
In a large bowl combine carrots, bread crumbs, cheese, and eggs. Stir in Sauted mix. Spread in pan and sprinkle with wheat germ. Cover with foil and bake for 30 min. Uncover and bake for 15 more min.
Serve warm with sauce.
