Easy and Authentic Chicken Taco's

Ingredients
1.5 lb Boneless Skinless Chicken Thighs28oz can of diced Tomatoes12oz water1/2 cup Chicken Stock 1/2 cup chopped red onion3 garlic cloves2 Tsp of Gulf of Mexico Spice Blend8 small corn tortilla's 1 cup Shredded Cabbage Guacamole or Diced Avocado, lime wedges and cilantro for garnish
Directions
Sautee onion, garlic and spice blend in chicken stock over medium-high heat until tender and aromatic. Add chicken thighs and diced tomatoes, partially cover pan and reduce heat to medium. Cook chicken for 25 minutes or until done. Allow to cool for 5 minutes and warm tortillas in a non stick skillet. With 2 forks shred chicken. Assemble tacos with an 1/8 of chicken, 1-2 tablespoons guacamole or sour cream, cilantro and a bit of cabbage. Enjoy!
