Low Fat New York Style Cheesecake

1 C Graham Cracker Crumbs2 T sugar3 T melted margarine1/2 c plain low fat yogurt2 T flour4 8 oz pkg Fat Free Cream Cheese, softened1 C sugar3/4 C Eggbeaters egg product1/2 t grated lemon rind2 t lemon juice1 1/2 t vanilla1 8 oz carton fat free sour cream1 T sugar
Coat 9" springform pan with cooking spray. Combine cracker crumbs, 2 T sugar and margarine. Firmly press crumb mixture in bottom of pan. Set aside.
Combine yogurt and flour in large mixing bowl at low speed of mixer. Add cream cheese, beating at medium until smooth. Add 1 c sugar, egg product, lemon rind, lemon juice, vanilla. Beat well. Spoon over crumbs.
Bake at 300 for 1 hr (center will be soft). Turn off oven and partially open door; leave cheesecake in oven 30 minutes.
Combine sour cream and 1 T sugar. spread over cheesecake. Cool in oven an additional 30 minutes with door partially open.
Remove from oven and cool to room temp on a wire rack. Cover and chill 8 hours.
