tomatoes, cucumbers, onion, mozzarella and fat-free Italian dressing.
Cut tomatoes into small bite sized pieces approximately 3/4" cubes, peel and quarter cucumber, then cut into 1/4" slices. using approximately a 1/4 onion, chop or slice according to preference, take some mozzarella (string cheese is my choice), and cut into similar size as the tomatoes. Put in a bowl and add about 2-3 tbs of fat-free Italian dressing (it doesn't separate, so will be better for left overs). Mix in a bowl.
No cooking, just chill and enjoy!
