Baked Potato Soup

6-8 medium size baked pototoes1 medium onion finely chopped2 T. butter6 cups chicken stock (1/2 cup reserved)2 Cups half-and-half4 T. cornstarchGarnish: shredded cheddar cheese and bacon
1. In a large pot saute onion in butter until soft. Add chicken stock, salt & pepper, and potato pulp.
2. Stir in half-and-half and heat to near boiling.
3. Take reserved chicken stock and add 4 T. of cornstarch. Blend well to remove lumps and add to boiling soup. Keep stirring until soup has thickened.
4. Garnish soup with cheese and bacon,
