Carly's yummy (and Gluten free) sausage and veggie Quiche

Ingredients
5 turkey sausage links.5 sweet onion chopped1 tsp olive oil3 medium sized mushrooms choppedsalt and pepper to taste.5 cup 2 % lactaid milk1/3 cup of shredded mozzarella (I used rice mozzarella since I'm also lactose intolerant)
Directions
Saute' mushrooms and onion in a tsp of olive oil
Remove and add sausage
Cook sausage until browned and cooked through
While the sausage is cooking, mix 7 eggs and milk together (whip thoroughly), add cheese, mix, add salt and pepper
In a 12 muffin pan, add egg
Gently drop in the onions and mushroom
Chop the sausage links and evenly distribute into the 12 muffins.

Bake at 350 degrees for 20 minutes
Wrap individually and bring with you to work. They are fine to put into the freezer as well!
