Howie's Creamy Potato Soup

1/2 C celery (choppped )1/2 C cauliflower (chopped ) 1/4 C onion (chopped)1/4 C green bell pepper (chopped)4 med potatoes (diced)2 med carrots (chopped)2 C low fat, low sodium Chicken Broth2 C water1/2 tsp garlic powder3 Tbsp flour1/3 c waterchives & shredded cheese optional
Place chicken broth in 6 quart soup pot over medium heat. Add the celery, cauliflower, onion, green pepper, 3 diced potatoes, 1 chopped carrot, and garlic powder. In a small bowl whisk the flour and water together and add to the soup pot. Continue to cook until vegetables are soft. Using a 1 quart pot bring the water to a boil and add the remaining chopped potato and carrot. Cook until just softened. Using an imersion blender puree the soup pot mixture. Stir the remaining potatoes and carrots, undrained, into the soup pot. If desired, serve topped with chopped chives and shredded cheese.
