Bahamian Peas 'n' Rice

Ingredients
1 Cup cooked pigeon Peas1 Cup Coconut Milk1 teaspoon salt1 small oniondash of thyme1 oz salt pork2 cups rice4 cups water2 tablespoon canola oil1 tablespoon tomato paste
Directions
Saute onion, salt pork and thyme in canola oil. Add tomatoes and allow to cook for 3 minutes. Add pigeon peas and simmer for 3 minutes. Add coconut milk and simmer for 5 minutes. Add water and bring to a boil. Season with salt. Add rice and allow to boil for about 5 minutes. Turn stove down to low heat, cover pot and allow to soak for about 30 minutes.
