tomato and basil soup

2 tins chopped tomatoes1 medium onion1 stalk celery700 ml water reserved from cooking veg (or stock cube which would increase calories etc)2 tbsp groundnut oil (or substitute if nut allergy)2 tbsp tomato puree12 basil leaves(98.9 calories per serving to here)1 desert spoon per serving creme fraiche (optional)
finely chop onion and celery.
Heat groundnut oil in large pan
add onion and celery and cook gently for 5 minutes until soft
Add the juice from both tins of tomatoes, stock and tomato puree
Bring to boil and simmer for 20 minutes.
Add the tomatoes and basil leaves
Cook for a further 10 minutes on low heat.
To serve, you can add 2 tbsp of creme fraiche.
