Tomatillo Shrimp Fajitas

Ingredients
1 1/2 c. red bell pepper strips2 tsp. minced garlic1 sm onion, sliced1/2 c. green salsa1 tsp. ground coriander16 oz. large shrimp, peeled and deveined8 (6-inch) corn tortillas2 tbsp. chopped fresh cilantro
Directions
1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add bell pepper, garlic, and onion; saute 4 minutes.
2. Stir in salsa, coriander, salt, and shrimp; saute 2 minutes or until shrimp are done
3. Arrange about 1/2 c. shrimp mixture down the center of each tortilla; sprinkle each tortilla with 1 1/2 tsp. cilantro. Serves 4 (serving size 2 fajitas).
