Summer Stir Fry

1 Green Bell Pepper1 Med-Large Tomato1 Small Onion1 Summer Squash3 Chicken Breasts, no bone, no skin2 tbsp Cumin2 tbsp PaprikaSalt and PepperOlive oil
Slice and chop the vegetables into bite size pieces. Toss them in a dish with olive oil, salt and pepper.
Cut chicken into bite size pieces and toss with the Cumin and Paprika.
Let everything sit for about 10 minutes.
Saute the chicken first with a little bit of olive oil until it's slightly browned, then add the veggies.
Cook until desired tenderness.
Serving Size: Makes 4-6 servings
