Introduction

Great go-to meal for those nights when you can't figure out what you WANT! Great go-to meal for those nights when you can't figure out what you WANT!
Number of Servings: 4

Ingredients

    1 lb boneless, skinless chicken breasts
    1 (16oz.) bottle chunky salsa (I like mild Pace)
    3/4 C. Cheddar cheese
    1 (8oz) can corn

Directions

1. In a large baking dish, pour a small amount of salsa on the bottom of the dish and sprinkle some corn.
2 . Trim off any excess fat off chicken breasts and place on top of the salsa/corn mixture in the dish.
3. Pour the remaining salsa and corn over the chicken and cover with foil.
4. Bake at 350 for 45 minutes
5. When done, sprinkle the cheese over the chicken and place the oven on Broil and cook, uncovered, until the cheese is melted and slightly browned.

    This was wonderful!! I doubled the recipe because I have a large family, and I added the black beans that were suggested. I also used frozen chicken tenders instead of chicken breast. It required an extra bit of baking time, but ooohhh, was it worth the wait! It was awesome! - 7/27/09

    This is a favorite in our house, and it's simple too! This recipe really saves on sodium and fat by not having taco seasoning or cream of chicken soup. YUMMMY!!! - 5/12/09

    Yummm! Thanks! I needed something quick and easy. I added a 1/2 can of black beans and 1/2 can of corn instead of just one can of corn - both were leftovers from a previous meal, so its what I had on hand. Thanks for sharing! - 10/3/10

    This one was GREAT! I love that this is topped with cheese. I have cut way back on the amount of cheese in my diet so this was like a visit from an old friend! Ha! - 10/3/09
