Ingredients
3 medium roma (plum) tomatoes (3/4 lb total), cut into eight slices2 (1-oz ea) slices part skim mozzarella cheese, each cut into strips (24 strips in all)1/8 tsp Salt SensePinch of black pepper2 tsp extra virgin olive oil1 tsp dried basil or 1/4 cup fresh
Directions
Arrange tomatoes and cheese alternatively on plate, overlapping slightly. Sprinkle with salt and pepper and drizzle with oil. Scatter basil on top.
