whole wheat french bread with seeds

Ingredients
1/4 cup warm water1 tbsp yeast2 tbsp honey2 cups warm water5-6 cups whole wheat flour1/3 c wheat germ1/8 c sesame seeds1/4 c flax seeds1/4 c quinoa flakes1/2 c sunflower seeds
Directions
Dissolve yeast in 1/4 cup warm water, let sit 5 minutes. Mix 2 cups warm water w/honey large bowl.. Add yeast mixture to water/honey. Add 3 cups flour, wheat germ, stir well. Add enough flour to form stiff dough. Knead on floured board until smooth and elastic (about 10 minutes). Place in bowl, cover, let rise until double in size. Mix all seeds together. Punch down, shape into 2 loaves. Roll/sprinkle seed mixture all around loaves. Let rise untl double. Score top, bake 350 for 25 minutes.
