Corn Dog Muffins

Ingredients
5 Oscar Meyer Fat Free Hot dogs, sliced.75 cup cornmeal.5 cup whole grain wheat flour.5 cup all purpose white flour.33 cup raw sugar3 tsp baking powder2 T canola oil1 cup rice milk1 large egg, beaten
Directions
Preheat oven to 375*. Spray muffin pan with nonstick spray.

Slice hotdogs and set aside.

Mix together dry ingredients in a large mixing bowl. In a separate bowl, stir together wet ingredients. Add wet ingredients to dry ingredient & mix until just blended. Do NOT overmix.

Add hotdogs to cornbread batter. Fill each muffin cup 2/3 full.

Bake in a 375* oven for 20-25 minutes.

Makes 12 muffins. 1 serving = 1 muffin.

    It was good not great but good. It went well with mustard like a corndog. I would make again.
    Changes I made:
    unsweetened applesauce instead of oil
    all whole wheat flour
    1 pk Hebrew National Beef Franks, 97% fat free

    Next time I will cook 17 or 18 minutes. 20 minutes was a little too long.
