Fragrant rice with chicken

- 1 cup white rice- 3 tbsp Olive Oil- 100g onion- 250g chicken breasts- 1 cup mushrooms- 3 cups hot water- 1 tsp black pepper- 0.5 tsp mint- parsley
Cut chicken, onion and nushrooms into cubes. Wash rice very well.
Heat the Olive oil in a saucepan and put the chicken cubes into it. Cook for 5 minutes and add onion and mushrooms. Cook another 5 minutes and put the rice until becomes transparent. Add 1 cup hot water and wait the rice to absorb it.
Heat the oven to 200 degrees C. Put the rice in a baking dish. Add salt and 2 more cups hot water and put the tray into the oven until water fully absorbs.
Sprinkle with fresh parsley
