Carly's beef and veggie Quinoa

Ingredients
.5 cup chopped sweet onion.5 cup orange bell pepper chopped1 zucchini chopped1 tsp coconut oil1 pound ground beef4 servings of quinoa (cooked)seasonings to taste (I used salt, black pepper, onion powder, and cilantro)
Directions
saute' chopped veggies in coconut oil
remove after cooking for about 10 minutes
brown ground beef in same skillet for about 15-20 minutes (until cooked through)
in a big bowl, mix cooked quinoa, cooked veggies, and browned beef
Add seasonings

Makes about 4 servings evenly distributed
