Lemon Pancakes

Egg, fresh, 1 largeFlour, white, 1 cupGranulated Sugar, 3 tspBaking Powder, 1 tspBaking Soda, .5 tspSalt, 1 dash Buttermilk, lowfat, 1 cupLemon Olive Oil, 2 tbspLemon zest, 1 tsp
I a small bowl rub lemon zest into sugar until pale yellow and fragrant. In a large bowl wisk together the egg, buttermilk and olive oil. Add flour, sugar, baking powder, baking soda and salt. Stir until just combined and lumpy. Do not overmix!
Heat griddle over medium heat, brush lightly with oil. Add 2 heaping tablespoons of batter to pan per pancake. Heat until bubbles form and start to pop. Flip and cook through. Makes 8-10 pancakes.
