Veggie Tofu Scramble

Ingredients
3 oz. /85 g. tofu2 tbsp red onion, diced1/2 c. broccoli, chopped1.5 oz. grape tomatoes, sliced in half30 grams bell peppers, I like yellow1/2 c. diced mushrooms1 TBSP daiya cheddar cheese1 TBSP daiya mozzarella cheese
Directions
Saute onion first, then add the rest of the ingredients, except the cheese and cook until desired tenderness. Add the cheese and melt. YUM! Season with salt and pepper if desired.
