Baked Corn and Pepper

Ingredients
• 3 cups fresh corn kernels • 1 red bell pepper chopped • 1/4 cup chopped fresh basil • 1 Tbs. minced shallot • 1 Tbs. red-wine vinegar • 1 tsp olive oil 1/4 tps. salt • freshly ground pepper
Directions
Preheat oven to 450 F. Mis corn and red pepper with the olive oil to coat and then spread out on a large baking sheet. Bake for about 20 minutes, stirring once, until some kernels begin to brown.
Combine basil, shallot, vinegar, salt and pepper in a medium bowl. Mix with corn and pepper.
Serve warm or cold
