Southern Style Green Beans with brown rice

Ingredients
Directions
One package baconOne onion2 packages frozen green beans (fresh if available, just cooked first)1 quart of chicken stock/broth (optional, you can use water)white vinegarSplenda granulated sugar substituteCooked brown riceground black pepper
Cut bacon into squares, put in a soup pot and turn heat to medium. Let bacon cook, stirring occasionally.
Chop onion, one medium or whatever size you have, add to bacon.
Add black pepper, about 1/2 t but to taste
Add 1/4 c white vinegar
Add 1/3 c splenda granulated sugar substitute
Stir
Add frozen or fresh green beans
stir
Add chicken stock
stir and bring to a boil, then cover pot with a lid and place on simmer.
Add more vinegar or sweetener to taste, I like a good balance and it's really to your taste. I don't add salt because even though the bacon is low sodium and so is the chicken stock, there seems to be plenty of salt for my taste.
Let simmer until beans are cooked to your liking. It usually takes a good 3 hours simmer.
Make brown rice per package directions, except I add garlic powder, parsley and onion powder to the water.
I serve in a bowl with a cup of rice on the bottom and ladle the green beans and broth on top.
