Scrambled Tofu Breakfast and Blueberries

Ingredients
1/2 package of firm light tofu (226.8 grams)1.5 tsp. soy sauce, 1/4 cup peppers, sweet, red, fresh, chopped1/2 small onion, chopped 1 tsp. olive oil,2 oz. low fat cheddar cheese1/2 cup blueberries
Directions
Mash tofu with soy sauce in a bowl until mixed. Heat oil over medium high heat. Saute onion until translucent. Add red pepper and saute for 1 more minute. Add tofu mixture. Let mixture sizzle , stirring occasionally, for 5 minutes until liquid is separated from tofu. Drain liquid from the pan and cook for another 2 minutes. Drain any excess liquid. Serve with cheese on the side or shred and add to scrambled tofu. Enjoy the fruit on the side.
