Mediterranean Quiche with Turkey Sausage

3 large spicy turkey sausage (~2 oz each)1 tomato (diced)1 med. onion (diced)1/2 green pepper (diced)2 cloves garlic (minced)1/2 cup frozen spinach5 large eggs5 large egg whites1/2 cup milk (1%)1 tsp salt (or less)1 tsp dill weed3 oz feta cheese1/2 tsp black pepper
Remove turkey sausage from casing and brown meat in frying pan. When done, remove meat from pan -- drain or pat dry if necessary (but should be very low fat).
While browning meat, chop vegetables. With meat on the side, add vegetables to pan and lightly saute. No need to cook fully, but enough to thaw spinach and slightly cook peppers & onions.
When done, mix meat and vegetables together. Place in bottom of a glass 11 x 7 inch pan that was coated with cooking spray.
In large bowl, combine eggs, egg whites, milk, salt, pepper, & dill weed. Lastly, stir in feta cheese. Pour egg mixture over the meat and vegetables. Stir slightly so that egg and cheese mix through completely.
Bake for 30-35 minutes at 350 degrees until knife inserted near center comes out cleanly. Let rest for 3-5 minutes before cutting to serve.
Serving Size: Makes about 12 -- 2 inch pieces
