Oatmeal Raisin Cookies

Ingredients
1 C flour2 1/2 tsp baking powder1/2 tsp salt1/2 tsp cinnamon1/4 tsp ground cloves1 C Old Fashioned Rolled Oats1 large egg1/2 C vegetable oil1 tsp vanilla 1 C xylitol (or palm sugar*) (or brown sugar**)1 C shredded Carrots3/4 C raisins (I like golden)*I don't know nutritional info but palm sugar has low glycemic index**brown sugar raises calories and carb counts.
Directions
*Preheat oven to 375
*Coat cookie sheets with non stick spray
*Stir together flour, baking powder, salt, cinnamon, and cloves. Stir in oats.
*Beat egg, oil and vanilla until blended
*Beat in sugar
*Beat in flour mixture in batches until evenly blended
*Fold in carrots and raisins - dough will be stiff
*Drop 1 heaping tsp dough on baking sheet, 2 inches apart
*Bake 10 to 12 minutes until slightly dark around edges
*Let cool 2 min, then transfer to wire rack to cool completely
