1 tbsp. canola oil1/2 lb. lean ground beef1 green pepper, chopped1/2 onion, chopped1 can yellow sweet corn, drained1 can dark red kidney beans, drained1 can Del Monte petite diced tomatoesCumin and chili powder to taste
In large skillet, heat canola oil on high heat.
Add beef, peppers and onions. Cook, stirring often, until beef browns and vegetables begin to soften.
Add tomatoes, beans, corn, and spices. Mix well. Lower heat to a simmer and cover, cooking 20 minutes or until flavors blend.
