3 cups oat bran1 t. baking power1/2 t. salt4 T. sweetener Juice of 1 lemon1 large apple, grated6 brown bananas, lightly mashed (leave some chunks)1/4 c. walnuts, chopped of halved1/4 c. raisins
Preheat oven to 375. Combine dry ingredients in a large bowl. Squeeze the juice of the lemon onto the combined apples and bananas. Add walnuts, raisins and water. Combine the wet and dry ingredients into one bowl. Pour into sprayed muffin tins and bake for 45 minutes or until golden brown on top.
These keep, tightly wrapped in fridge, up to one week.
Serving Size: Makes 6 large muffins or one enormous loaf!
