cold cucumber soup

Ingredients
1 lb chopped cucumber2 tbsp margarine1/4 chopped scallions4 c chicken broth1 tsp wine vinegar1/2 tsp dill weedsalt and pepper to taste1/2 c sour cream
Directions
Peel cucumber and chop into 1/2 in chunks. melt butter or margarine in lg saucepan.Stir in onion and saute 2 minuytes. Add cucumber, broth,vinegar and dill weed and bring to a boil.

Simmer uncovered 20 minutes. Puree in blender. Stir in the sour cream and chill for several hours. Ladle in chilled bowls and top wih tsp of sour cream and chopped cucumbers.
