whole wheat pancakes

Ingredients
1.5 cups whole wheat all-purpose flour1.5 tablespoons sugar1 tablespoon baking powder0.25 teaspoon salt (optional)0.125 teaspoon (1/8) freshly ground nutmeg1 large egg and 1 serving (3 tbsp) of egg whites (or 2 large eggs, optional)1.25 unsweetened almond milk (or any milk)0.5 teaspoon vanilla extract1.5 tablespoons unsalted butter (3 tbsp, optional)PAM spray or a couple of tablespoons of canola oil
Directions
Whisk together all the dry ingreidents (flour, sugar, baking powder, salt, nutmeg).

In a separate bowl, beat the eggs and whisk in the milk and vanilla.

Melt the butter in a large skillet/pan.

Add wet ingredients to dry and mix until there are no lumps. Don't overmix or batter will become tough. Use a 1/4 cup measuring cup to measure out each serving.

Add dark chocolate chips, blueberries, apple, banana slices, etc to the top of the pancakes while they are in the pan to enhance them, if desired.

Serving Size: Makes 6 large pancakes or 8 regular sized pancakes - use 0.25 cup measuring cup to measure out into pan
